Tall-stemmed parfait glass: Fill to 3/4 with orange juice. Gently top-up with cranberry juice until juices swirl together. Add a sprig of mint & enjoy a delicious & beautiful Island Sunrise!

Fruit Bowl ~ Single Serving

Line a stemmed glass bowl (1-cup size)with leaf lettuce. Add pink grapefruit & oranges (sectioned), few berries in season, thick slices of banana & top with cottage cheese. Garnish with blueberries or raspberries.

Egg Truffles with Fresh Island Bacon

4 slices nut-grain bread,
1 cup cheddar cheese ~ shredded (reduced-fat),
2 green onions ~ chopped,
4 slices grilled bacon ~ finely chopped,
1/2 tsp garlic powder,
1/2 tsp fresh basil,
4 eggs or 1 cup liquid egg
1/2 tsp paprika.

Preheat oven to 350 degrees.
Mold bread to fit well-greased muffin pan. Layer 1st three ingredients into each bread basket & sprinkle with garlic powder & basil. Beat eggs & pour over mixture in each basket, covering ingredients. Bake 20 minutes until eggs puff up. Gently lift truffles from pan, sprinkle with paprila & serve w/ hollandaise sauce.
