Chocolate Chip Cookies

Mmmmmmm!
Preheat oven to 375 degrees F (177 degrees C) with rack in center of oven. Line a baking sheet with parchment paper. Set aside.

In bowl of electric mixer, with the paddle attachment, cream the butter. Add the white and brown sugars and beat until fluffy (about 2 minutes). Beat in eggs, one at a time, making sure to beat well after each addition. Add the vanilla and beat until incorporated.

In a separate bowl, combine flour, baking soda, and salt. Add the dry ingredients to the egg mixture and beat until incorporated, adding the chocolate chips about half way through mixing. If you find the dough very soft, cover and refrigerate until firm (about 30 minutes).

For large cookies, use a 2 tablespoon ice cream scoop or a tablespoon, drop about 2 tablespoons of dough (38 grams) onto the prepared baking sheet. Bake about 12 - 14 minutes, or until lightly browned around the edges. Cool completely on wire rack.

Note: You can freeze this dough. Form the dough into balls and place on a parchment lined baking sheet. Freeze and then place the balls of dough in a plastic bag, seal, and freeze. When baking, simply place the frozen balls of dough on a baking sheet and bake as directed - may have to increase baking time a few minutes.

Waffles

Ingredients

2 cups all-purpose flour

1 teaspoon salt

4 teaspoons baking powder

2 tablespoons white sugar

2 eggs

1 1/2 cups warm milk

1/3 cup butter, melted

1 teaspoon vanilla extract

Directions

In a large bowl, mix together flour, salt, baking powder and sugar; set aside. Preheat waffle iron to desired temperature.

In a separate bowl, beat the eggs. Stir in the milk, butter and vanilla. Pour the milk mixture into the flour mixture; beat until blended.

Ladle the batter into a preheated waffle iron. Cook the waffles until golden and crisp. Serve immediately.

Christmas Breakfast Sausage Casserole

Ingredients:

1 pound ground pork sausage

6 slices white bread, toasted and cut into cubes

1/2 pound shredded mild Cheddar cheese

1 teaspoon mustard powder

1/2 teaspoon salt

4 eggs, beaten

2 cups milk

Preparation:

1. Crumble sausage into a medium skillet. Cook over medium heat until evenly brown; drain. 2. In a medium bowl, mix together cooked sausage, toasted white bread, Cheddar cheese, mustard powder, salt, eggs and milk. Pour into a greased 9x13 inch baking dish. Cover, and chill in the refrigerator 8 hours, or overnight. 3. Preheat oven to 350 degrees F (175 degrees C). 4. Cover, and bake 45 to 60 minutes. Uncover, and reduce temperature to 325 degrees F (165 degrees C). Bake for an additional 30 minutes, or until set.

Gluten free Chocolate Cake

Mmmmmmm!
1 1/2 cups semisweet chocolate chips

1 (19 ounce) can garbanzo beans, rinsed and drained

4 eggs

3/4 cup white sugar

1/2 teaspoon baking powder

1 tablespoon confectioners' sugar for dusting


Directions
1.Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch round cake pan.

2.Place the chocolate chips into a microwave-safe bowl. Cook in the microwave for about 2 minutes, stirring every 20 seconds after the first minute, until chocolate is melted and smooth. If you have a powerful microwave, reduce the power to 50 percent.

3.Combine the beans and eggs in the bowl of a food processor. Process until smooth. Add the sugar and the baking powder, and pulse to blend. Pour in the melted chocolate and blend until smooth, scraping down the corners to make sure chocolate is completely mixed. Transfer the batter to the prepared cake pan.

4.Bake for 40 minutes in the preheated oven, or until a knife inserted into the center of the cake comes out clean. Cool in the pan on a wire rack for 10 to 15 minutes before inverting onto a serving plate. Dust with confectioners' sugar just before serving.
