German Apple Pancakes (makes 6 pancakes)

250g flour 1/2 grated apple
30mg sugar lemon juice
5mg salt whipping cream
300ml milk sugar/cinnamon mix
2 eggs butter
Combine first three dry ingredients, add milk and blend, then add eggs one at a time.
Grate apple into mixture and add lemon juice. In a skillet melt 2g butter on med heat and add 50 ml of batter. When set flip over pancake and reserve in a warmed oven until ready to prepare. Make additional pancakes.
Cut 1 and 1/2 apples (unpeeled) into slices, put in a small saute pan and add about 50ml of water and 5mg of butter. Heat on med for about 10 mins to soften apples, add 30g brown sugar, maple syrup and simmer a few minutes to carmalize.
Take 2 crepe like pancakes, sprinkle each with sugar/cinnamon mixture and roll up. Place seam side down on plate pour 1/3 of apple and syrup mixture over the two rolled pancakes and add a dollop of whipped cream and a berry garnish. Serve with cooked sausages.

Cheese & Green Onion Soufflé

White sauce:
1/4 cup butter, melted in pot on stove, add
1/4 cup flour (regular or gluten free), mix well with whisk
Add: 1 cup milk (regular, or dairy free) continue stirring until thickened.
Take off heat, add 4 egg yolks (save egg whites in separate bowl) stir in.
Add any cheese of your choice up to 1/2 cup and green onions, stir in.

Beat egg whites, salt, dill weed, pepper etc. until firm. With spatula fold white/ cheese sauce in with the stiff egg whites until blended. Pour into buttered individual ramekins, add a bit of grated cheese on top.
385 deg F preheated oven for about 22 minutes. Serve immediately!
