French Toast

Use a thick sliced multigrain bread or fresh French bread, then dip in a batter of eggs, milk, cinnamon and sugar.
Lightly brown on both sides - I always use butter.
I also prefer a stove top grill! Serve with a fresh fruit sauce or a selection of Syrups - especially great is our Canadian maple syrup or BC Okanagan berry syrups. Enjoy!

Crepes with Fresh Fruit Sauce

5 eggs
1 1/2 cup milk
pinch of salt
beat above until foamy - I use a blender for this.
Add 1 cup of flour (or more if the batter is too runny)
Pour small amount of batter into a crepe pan, swirl to cover the bottom of the pan and turn when lightly browned - total cooking time is about 1 Minute.

Mix fresh fruit of choice with brown sugar, heat with some butter and cook slowly until you have a sauce. Serve warm over the crepes! Have a bowl of fresh strawberries and some whipped cream available as well!

Wonderful Cheese Omelet!

Beat two or three eggs with salt, pepper and a small amount of skim milk.
Heat Omelet Pan and add generous pat of butter. Add egg mixture then top with a combination of cheeses which includes cheddar. If guests approve, add some feta cheese for a unique and tangy taste!

Breakfast Burritos

Prepare filling for burritos;
In frying pan, heat butter and add mushrooms, onions, peppers and/or celery to taste
When browned, add scrambled eggs and only partially cook
Add cheese and mix all well
Fill tortillas with egg mixture, folding in edges and placing in baking pan rolled edge down
Top with more cheese and bake at 350 for 30 to 45 minutes
(I prefer to use tex-mex cheese) for topping
Serve with sour cream and a variety of salsas
