Quintessential Canadian Apple pie

Mmmmmmm!
Pastry for 2 pie shells
2 Macintosh apples
2 Northern Spy apples
1 Ambrosia apples
1 Golden delicious
1/3 cup white sugar
1/4 cup chopped dates
2 Lemon/ginger snaps crumbled
2 Table spoon of cornstarch
Juice of ½ a lime
½ teaspoon cinnamon
Dash of nutmeg
1 egg yolk beaten with 1/4 teaspoon water

Prepare pie pastry, line one 9-inch pie dish with half and cut lattice with other half.

Mix together sugar, dates, lemon/ginger snaps, cornstarch, cinnamon and nutmeg. Shred on mandolin with shoe string blade 2 Mackintosh, 1 Northern Spy, 1 Ambrosia and 1 Golden delicious un-pared. Mix in bowl with dry ingredients. Peel and core the remaining Spy apple, cut into wedges and toss with lime juice.

Pour ½ of the shredded apple mixture in the pie shell, arrange the Northern Spy wedges as a second layer and add the remaining shredded mixture. Cover with lattice and brush with egg yolk mixture. Bake for 20 minutes in a pre-heated 425' oven, reduce heat to 375' and bake for another hour or until bubbling appears at the edges.

More or less apples may be required depending on apple size. For best flavour use freshly picked apples.
