Our Scone-in-the-round is Scrumptious...Afternoon Tea Superb

Maple Biscuits Yield:10 biscuits

.2 cups flour
.1 tbsp. baking powder
.1/4tsp. salt
.4 tbsp. cold unsalted butter
.1/2 cup cream
.1/4 cup maple syrup

Oven to 400degrees

Put dry ingred. in large mixing bowl.
Cut butter in 'til coarse meal results.
Make well in centre.
Mix cream and syrup. Add, stirring 'til
dough forms. Knead briefly on lightly floured
surface. Roll or pat to 3/4inch.
Cut and put on lightly greased baking sheet.
Bake 10mins. or 'til lightly browned on
bottom and creamy white on top.

Creamy Sauce for Fresh Fruit Yield:1cup

Assorted fresh fruit-peeled and cut
.1 cup plain yogurt(5.9%)
.3 tbsp. maple syrup
.1 tbsp. Cointreau liqueur(or Frangelico)
.1 tbsp. fruit flav. vinegar

Mix, pour over fruit and serve

Basil&Cucumber Afternoon Tea Sandwiches (24)

.1/2#cream cheese, softened
.2tbsp. whipping cream,not whipped
.1-2 organic cucumbers,seedless,sliced
.2 cups whole fresh basil leaves
.1 loaf grain bread, sliced&halved

Mix cream and cream cheese until smooth.
Spread mixture evenly onto half slice of bread.
Top with cucumber slices. Place 2or3 basil leaves
at one end in a decorative fashion, and press gently.

Continue, arranging on platter...refrigerate 'til serve.

Tomato Salad/ Afternoon Tea (6 servings)

.1/2 pint cherry, grape or pear tomatoes
.4 plum or saladette tomatoes, sliced
.2 large tomatoes, sliced (alternating red&yellow looks nice)
.up to 2 cups feta cheese, crumbled
.2 cucumbers, medium, or 1 large, sliced&quartered
.1/3 cup sliced black olives
.1/2 cup fresh herbs- try basil and lemon thyme or mint etc.
.1/2 lime
.1/4 cup extra virgin olive oil
.1 tbsp. vinegar of choice

Assemble tomatoes,feta, cucumbers, olives and herbs in a large
bowl. Squeeze most of juice from the lime over the salad.
Combine oil&vinegar. Add salt and pepper. Pour over salad, toss and serve.
